PHÉNIX eatery and bar serves up succulent roast chicken to live for

Roast chicken is a dish that’s as French as it is Shanghai. Here and in cities across France, it’s a popular meal among friends catching up over Saturday lunch, and also with couples out for an easy afternoon meal.

That’s why the roast chicken at the PHÉNIX eatery and bar is where these two sides meet. It’s a rustic dish that runs deep in our roots, which we refined in our style as a modern French bistro in Shanghai. Served with sides, sweets and specially paired wines, it’s an exclusive dish for an elegant lunch overlooking Jing’an Park. Like the rest of the produce, The PuLi Hotel and Spa looks for the healthiest chicken possible, and the hotel gets them from the Natural Poultry Group. They rear them without antibiotics or hormones, and the birds turn out leaner than traditionally raised poultry.

The meat is brined, slow cooked and browned to order, and arrives at the table with the skin delicately crispy and the meat deeply juicy. Accompanying the dish is a garden salad, roast potatoes and ratatouille. Either a Côte du Rhône red or white wine is a perfect pairing and finish with coffee or tea and a selection of mignardises. It’s a roast chicken that’s classy yet casual and meant to be shared with friends or your special one.
