The Michelin Guide Shanghai 2021 was announced on Wednesday, with 43 restaurants awarded one or more stars.

Western restaurant Ultraviolet, famous for its intricate dining experience, won three stars for the fourth consecutive year. Its customers are told of a rendezvous location first before being taken to the restaurant for a feast.

Ten restaurants awarded two stars include French restaurant L’Atelier de Joël Robuchon and traditional Shanghai-style YongFoo Élite. Another two moved up to this rank this year, Italian restaurant Da Vittorio and Cantonese-style Bao Li Xuan.

There are 32 one-star restaurants in this year’s edition of the Shanghai guide, along with 21 Bib Gourmand and 61 Michelin Plate establishments.

Canton Table serving Cantonese cuisine, Meet the Bund famous for its Fujian dishes, local restaurant Ren He Guan (Zhaojiabang Road) and Huai-Yang restaurant Tea Culture (East Beijing Road) joined the one-star list for the first time.

This year adds two brand-new awards honoring remarkable service and young chefs. Jim Wang, of Ji Pin Court, and Ian Chen, of Meet the Bund, received the accolades.

Gwendal Poullennec, international director of the Michelin Guide, said that chefs had demonstrated both resilience and solidarity over the past months to overcome the COVID-19 crisis.

“With this fourth edition of Michelin Guide, we are extremely proud to tell the world that Shanghai, once again, is shining with its many gastronomic talents, who are running restaurants that make Shanghai a must-see gourmet destination,” he said.

Kamran Vossoughi, president and CEO of Michelin China, said: “We do not miss out the new edition in spite of challenges the industry faces. As shown on the cover of the 5th anniversary edition, we would like to wish the Shanghai culinary industry continued healthy, stable and high-quality growth with a carp that symbolizes an auspicious future in Chinese culture.”
